New Year's Eve Recipes 2016
Gorgonzola Spinach Artichoke Dip

2 (10-ounce) boxes chopped frozen spinach
1 box frozen artichoke hearts
3 tablespoons butter
4 cloves garlic, chopped
3 tablespoons all-purpose flour
1 cup chicken stock
1 cup milk
Salt and freshly ground black pepper
Pinch ground nutmeg, or to taste
1 cup Gorgonzola crumbles
1 1/2 cups shredded (a little larger than grated, available in tubs) Asiago or Parmigiano-Reggiano
Thick sesame bread sticks, for dipping
Celery hearts, trimmed for dipping
Pita crisps with Parmesan and herbs (recommended: Stacy's)
Directions
Defrost spinach 10 minutes on defrost setting in microwave then drain well by wringing out in dish towel. Defrost artichokes as well, 6 minutes on defrost in microwave then wring out and finely chop.
Heat a sauce pot with butter over medium to medium-high heat. Add garlic to melted butter and stir 1 to 2 minutes, then sprinkle in flour and combine 1 minute more. Whisk in stock and milk and season with salt, pepper and nutmeg. Thicken 2 minutes then remove from heat and melt in Gorgonzola. Stir in spinach and artichokes and half the shredded cheese then transfer to a small casserole and top with remaining cheese. Brown and bubble in the oven for 10 to 12 minutes. Serve with bread sticks, celery hearts and pita crisps for dipping.

A fresh take on Hoppin' John (traditionally cooked with bacon or ham hock and ladled over rice), this salad gets its rich flavor from turkey sausage � and saves a total of 294 calories and 16 grams of fat per serving.

Ingredients
2 c. dried black-eyed peas
14 oz. smoked turkey sausage
6 small carrots
3 large ribs celery
� c. Chopped parsley
3 sprig parsley
2 bay leaves
� c. cider vinegar
3 tbsp. extra-virgin olive oil
1 small onion
2 tbsp. Dijon mustard
1 tbsp. finely chopped tarragon
� tsp. Hot paprika
� tsp. Sea Salt
Directions
Place black-eyed peas in a large pot and add enough water to cover by 2 inches. Bring to a boil over high heat. Remove from heat and let soak for 1 hour.
Drain black-eyed peas and return to same pot. Cut sausage into 3 pieces. Cut 2 carrots and 1 celery rib in half. Add cut sausage, carrots, and celery, plus parsley sprigs and bay leaves, to pot. Add enough water to cover by 2 inches. Bring black-eyed peas to a boil over high heat. Reduce heat to medium-low and simmer until tender, 45 minutes to 1 hour. Transfer sausage to a cutting board and peel away casing. Drain black-eyed peas (discard vegetables and herbs), transfer to a large serving bowl, and sprinkle with vinegar. Set aside.
Slice sausage into 1/2-inch-thick rounds; then cut each round into quarters. Dice remaining carrots into 1/4-inch pieces. In a large nonstick skillet over medium-high heat, heat 1 tablespoon olive oil. Add sausage and cook, stirring occasionally, until lightly browned, about 5 minutes. Add carrots and cook, stirring until softened, 3 to 4 more minutes. Transfer to a medium bowl.
Dice remaining celery into 1/4-inch pieces and add � along with remaining olive oil, onion, mustard, tarragon, paprika, and salt � to sausage mixture. Stir well to mix. Gently fold sausage mixture and remaining parsley into peas. Sprinkle with more paprika, as desired. Serve at room temperature or chilled.
